I love the idea of using this as cous cous substitute. I just finished a bag of millet flour over the weekend. I used it to replace oat flour in a cookie recipe and it worked very well!

Thanks for sharing! I've never cooked millet before, but I admit I'm getting tired of plain rice, so I'm going to look for it the next time I go grocery shopping!
