Trader Joe’s sells a fresh gluten-free pasta, egg fettuccine. My wife and I tried it at home with Alfredo sauce (recipe below), and here’s what we thought.
We were just talking about this tonight. It is truly as close as possible to real handmade fresh pasta. We grabbed gf penne bc we weren’t near TJ at the time bit it’s not nearly as good.
I think this would taste very good with olive oil. There is a traditional Roman pasta dish that is fettuccine with grated Pecorino Romano and black pepper.

Might you know of a GF pasta that uses guar gum instead of xanthan gum?

I'm curious if it would also be delicious substituting extra virgin olive oil for the butter? Have you tried it that way?
Sadly, no TJ in our area or I'd be running out to buy some.
I also think adding black pepper is a great idea. I was tempted to do that myself.

This one works very well if you make sure to stir frequently while it’s cooking to prevent sticking.
